Banana & White Chocolate Loaf
A generous sized loaf with a dark crunchy crust and soft moist interior.

Prep time:  10mins
Cook time:  1 hour

   

INGREDIENTS:

3/4 cup sugar
1/2 cup oil
2 eggs
2 mashed bananas (approx. 1/2 cup)
1 3/4 cups flour
3/4 tsp salt
1 1/2 tsp baking soda
1/2 cup yoghurt
3/4 cup milk/white chocolate bits
1/2 cup walnuts/brazil nuts (optional)


METHOD:
  1. Preheat oven to 180°C. Line a loaf tin with baking paper.
  2. Beat sugar and oil together.
  3. Beat eggs in one by one, mix in the banana.
  4. Mix baking soda with yoghurt, add to banana mixture along with chocolate bits and nuts (if using).
  5. Sift over flour and salt.  Stir to combine.
  6. Pour into tin and bake for 1 hour or until a skewer comes out clean.  Cover with foil if the loaf starts to brown too quickly.

TIPS:

Freezes well.



Quick Date  Loaf
Fairly healthy so far as baking goes!

INGREDIENTS:

100g butter
3/4 cup brown sugar
3/4 cup milk
1 cup flour
1 cup wholemeal flour
1 tsp bicarb soda
1 tsp salt
1/4 tsp cinnamon
1 cup chopped dates
1 egg, beaten


METHOD:



  1. Preheat oven to 180°C.  Line a loaf tin with baking paper.
  2. Melt butter and sugar over low heat.
  3. Remove from heat, add milk, and cool mixture in sink of cold water.
  4. In a bowl combine flour, soda, salt, cinnamon and dates.  Mix well.
  5. To cooled butter mixture, add egg, stir well.
  6. Pour butter mixture into dry ingredients, stir until smooth.
  7. Pour into tin, bake for 45-50mins.



Carrot & Pineapple Muffins
Yummy, healthy and popular with kids.

Prep time:  15 mins
Cook time:  25mins



INGREDIENTS:

1 cup flour
1 cup wholemeal flour
1 tsp baking powder
3/4 tsp bicarb soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp salt
3/4 cup vegetable oil
1/3 cup sugar
2 eggs
1 1/4 cups grated carrot (approx. 1 large carrot)
1 can crushed pineapple, drained
2/3 cup raisins


METHOD:
  1. Preheat oven to 180°.
  2. Sift together dry ingredients.
  3. In a separate bowl beat oil, sugar and eggs together.
  4. Add carrot, pineapple and raisins.
  5. Add wet ingredients to dry, mix until just combined.
  6. Bake for 25 mins.

TIPS:
Makes really cute little mini muffins too!
Chop raisins for very small children.
